Jicama-Citrus Salad

Ingredients

3 large oranges, pared and sectioned
2 red grapefruit, pared and sectioned
1 medium jicama (about 1 pound), pared and cut into 1/2-inch cubes
Sangria Dressing (recipe follows)

Arrange oranges, grapefruit and jicama on eight salad plates or mix together. Serve with Sangria Dressing. Serves 8.
Per serving with dressing: 175 calories; 2 gm protein; 26 gm carbohydrates; 7 gm fat; 0 mg cholesterol; 10 mg sodium.


Sangria Dressing

1/4 cup vegetable oil
1/4 cup dry red wine or grape juice
2 tablespoons honey
2 tablespoons orange juice


Directions

Shake all ingredients in tightly covered container.
