Spaghetti Salad
Ingredients
Yield: 4 servings
1 cup (5 ounces) uncooked spaghetti
3/4 tablespoon vegetable oil
3/4 tablespoon vinegar
1 teaspoon soy sauce
1/2 teaspoon garlic powder
1 1/2 tablespoons mayonnaise
1 tablespoon chopped fresh parsley
1/3 cup finely minced green pepper
1/3 cup finely minced pimento, drained
2/3 cup finely cut cooked ham
Salt and white pepper to taste
Directions
Break spaghetti into 1/2-inch pieces (measure after breaking to make 1 cup). Cook in boiling, salted water for 10 minutes. Drain and cool. In a 6-cup bowl, mix oil, vinegar, soy sauce, garlic and mayonnaise until well-blended. Add spaghetti, parsley, green pepper, pimento, ham, and toss together lightly. Taste and add salt and pepper as needed. Cover and chill for about 6 hours before serving.
Each serving contains 211 calories, 10g fat, 423mg sodium, 15mg cholesterol, 41% calories from fat.
