Chicken Melon Salad

Ingredients

Yield: 4 servings

2 medium cantaloupes
2 cups diced, cold cooked chicken
1 cup seedless grapes (red or green)
1 small kiwi, sliced
Lime-honey dressing

For Dressing:
4 tablespoons lime juice
4 tablespoons honey
1/4 teaspoon ground coriander
1/4 teaspoon nutmeg


Directions

Mix dressing ingredients together and set aside. Cut fruit from melons into bite-size pieces. Mix lightly together the chicken, melon and grapes. Gently stir in dressing. Garnish with kiwi slices.
