Beef Crust Casserole

Ingredients

Yield: 6 servings

1 1/2 pounds very lean ground beef
1/2 cup chopped onion
1 teaspoon salt
1/4 cup catsup
1 can condensed mushroom soup
1 package (approx. 12 ounces) frozen peas and carrots
1/2 cup uncooked rice
1/2 cup water
1/2 teaspoon salt
1 cup dry Chinese noodles (canned)


Directions

Combine meat, onion, salt, catsup. Line a 2-quart casserole with mixture, patting up sides to form a crust. Combine soup, vegetables, rice, water and salt. Mix well. Pour into meat crust. Cover and bake in 350 degree oven for 1 hour and 15 minutes. Uncover, top with Chinese noodles and bake, uncovered, another 15 minutes.

Each serving contains 471 calories, 26g fat, 26gm carb, 1419mg sodium, 103 mg cholesterol.
