Ice Cream Muffins

Ingredients
2 cups self-rising flour
1 pint ice cream, softened
Nuts or flavoring
Blend together flour and ice cream until well moistened. Add nuts or other flavoring, depending upon flavor of ice cream. Batter will be lumpy. Fill 10 well-buttered muffin cups 3/4 full and bake at 350 degrees for 20 minutes.
Directions
Variations: vanilla ice cream and lemon flavoring; maple nut ice cream with nuts and maple flavoring; cherry nut ice cream with additional cherries; blueberry ripple ice cream with nuts or other flavors of your choice.
Each serving (without fla-vorings) contains 142 calories, 3 g fat, 12 mg cholesterol, 25 g carbohydrate, 341 mg sodium.
