Morning Glory Muffins
Ingredients
2 cups flour
1 1/4 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 cups grated carrots
1/2 cup raisins
1/2 cup chopped nuts
1/2 cup shredded coconut
1 apple, peeled, cored and grated
3 eggs
1 cup vegetable oil
2 teaspoons vanilla
Directions
Preheat oven to 350 degrees.
In a large bowl, sift together the flour, sugar, baking soda, cinnamon and salt. Stir in the grated carrots, raisins, nuts, coconut and apple. In a separate bowl, beat together the eggs, oil and vanilla. Stir into the flour mixture just until moistened. Spoon batter into well-greased muffin tins. Bake 20 minutes. Makes 24 small muffins.
Each serving contains 216 calories, 12g fat, 25g carb, 308mg sodium, 26mg cholesterol.
