Watermelon and Spinach Salad

Ingredients

For Salad:
6 cups torn fresh spinach
3 cups cubed seeded watermelon
1 cup sliced fresh mushrooms
1 tablespoons real bacon bits
1/3 cup Sweet and Sour Dressing (recipe below)

For Dressing:
1/3 cup balsamic or red wine vinegar
3 tablespoons vegetable oil
1/4 cup granulated sugar
1/4 cup chopped onion (about 1/2 medium onion)
1 teaspoon Worcestershire Sauce
1/2 teaspoon salt


Directions

In blender or professor, process all dressing ingredients until blended. Makes 1 cup. In large salad bowl, mix all ingredients except dressing. Just before serving, toss spinach mixture with dressing. Makes 6 servings.

Each serving contains 82 calories, 3g fat, 12g carb, 129mg sodium, 1mg cholesterol.
