Pasta Frittata

Ingredients

5 large eggs
1/3 cup grated Parmesan cheese
1/4 cup milk
4 cups cooked spaghetti or other long pasta
1/4 teaspoon salt
Freshly ground black pepper to taste
1/2 tablespoon butter


Directions

Preheat oven to 350 degrees. Coat a pie plate with non-stick cooking spray and set it aside.

Beat eggs in a large bowl until well mixed. Stir in all of the remaining ingredients except the butter. Pour the mixture into the pie plate. Cut butter into bits and distribute over the top.

Bake 10 minutes, then remove from the oven and very lightly stir the mixture. Return to oven and bake an additional 10 to 15 minutes, or until a knife inserted in center comes out almost dry. Cut into wedges and serve. Serves 3 to 4.
