Turkey & Spinach Salad
Ingredients
Yield: 12 servings
For Salad:
1 pound smoked turkey, cut in thin julienne strips
2 packages fresh spinach
1 package bowtie pasta, cooked according to package directions
1 pint cherry tomatoes, halved
1/4 cup fresh parsley, chopped
1/2 cup fresh basil, chopped
1 red onion, thinly sliced
6 ounces fresh roasted pine nuts
Garlic Vinaigrette:
2/3 cup olive oil
1/2 cup white wine vinegar
1/4 cup water
1 1/2 teaspoon salt
1 tablespoon pepper
2 cloves garlic, crushed
Cook and well-drain the bowtie pasta. Cool in refrigerator. Wash and pat dry fresh spinach. Place in large bowl with cooled pasta, halved cherry tomatoes, chopped parsley and basil, thin-ly sliced red onion and pine nuts. Toss with Garlic Vinaigrette.
Each serving contains 358 calories, 20g fat, 31g carb, 843mg sodium, 25mg cholesterol.
Directions
NOTE: The Garlic Vinaigrette is more flavorful if prepared a day ahead.
