Green Salad with Cheddar and Apples

Ingredients

Yield: 4 to 6 servings

1 head red leaf lettuce
1 head green leaf lettuce
2 Granny Smith apples, thinly sliced *
1/2 cup walnuts, toasted **
4 ounces sharp cheddar cheese, sliced into curls using a cheese slicer
2/3 cup extra-light olive oil
1/3 cup balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon pepper, freshly ground

Whisk together balsamic vinegar, salt and pepper. Gradually mix in oil. Set aside. Wash and gently tear lettuce. Toss with apples, walnuts and cheese. Toss with dressing. Serve immediately.
Each serving contains 364 calories, 33g fat, 14g carb, 340mg sodium, 14mg cholesterol.

* Make sure apples are fresh and crisp. Golden Delicious work well when they are in season.


Directions

** To toast nuts, preheat the oven to 325 degrees. Scatter whole shelled nuts or large pieces on a baking sheet. Toast, tossing or stirring occasionally, until lightly browned and fragrant, about 15 minutes for 4 ounces. If the pieces are finely chopped they will take slightly less time to toast.
