Noodle Kugel
Ingredients
1-pound package wide egg noodles
3 eggs
2 cups (1 pound) cottage cheese
3/4 cup sour cream or yogurt
8 ounces cream cheese
1 teaspoon vanilla extract
1 to 2 teaspoons cinnamon
1/4 to 1/2 cup sugar (to taste)
1/2 teaspoon salt
1 tart apple, peeled and chopped (optional)
1/2 cup (packed) raisins (optional)
2 ripe peaches, peeled and sliced (optional)
Topping:
1 cup bread crumbs and/or wheat germ
1 1/2 teaspoons cinnamon
1/4 cup brown sugar
Directions
Preheat oven to 375 degrees. Spray with non-stick cooking spray a 9- by 13-inch baking pan.
Cook the noodles until about half done. Drain, rinse with cold water, and drain again.
Combine eggs, cottage cheese, sour cream or yogurt, cream cheese, vanilla, cinnamon, sugar and salt in a food processor and process until smooth. Stir mixture into noodles along with apple and raisins. Transfer to baking pan.
Combine topping ingredients and sprinkle over noodles. Bake for about 40 minutes. Serve hot, warm, or room temperature. Makes 8 to 10 servings. From "Moosewood Cookbook, New Revised Edition," Mollie Katzen, Ten Speed Press, 1992.
