Allison's Party Chicken Roll-Ups

Ingredients
Yield: 72 rollups
6 deboned chicken breasts, cut into bite-size pieces
2 or 3 pounds bacon, cut in 1/2-inch strips
1 cup apricot jam
1/2 cup soy sauce
1/4 teaspoon dry ginger
1/4 teaspoon garlic powder
Directions
Cut up chicken breasts into bite-size pieces. Set aside. Cook bacon strips until half-done and wrap around chicken pieces. Secure bacon with toothpick. Combine apricot jam, soy sauce, ginger and garlic powder; set aside. Bake chicken in 350-degree oven for 20-25 minutes. Pour sauce over chicken and cook another 10-15 minutes.
Each serving contains 115 calories, 8 g fat, 3 g carb, 325 mg sodium, 18 mg cholesterol.
