Fresh Peach Pie

Ingredients

1 9-inch baked pie shell or crumb crust
1 cup sugar
1/4 cup cornstarch
1 1/2 cups water
1 package (3 ounces) orange or peach gelatin
3 to 4 cups fresh peaches, sliced whipped cream (optional)


Directions

Mix sugar, cornstarch and water in a saucepan. Bring to a quick boil. Cook until thickened and clear. Add gelatin. Arrange peaches in pie shell. Pour gelatin mixture over peaches and refrigerate. Garnish with whipped cream, if desired.

Note: Other fresh fruits or berries with compatible-flavored gelatin may be substituted for peaches and orange gelatin above.
