Ginger Peach Parfait

Ingredients

1 box (2 1/8 ounces) low-calorie vanilla pudding mix
1 2/3 cups skim milk
1 cup drained, chopped peaches
1 cup prepared low-calorie whipped topping
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg


Directions

In medium bowl blend pudding mix and milk. Microwave at high 4 to 6 minutes, or until slightly thickened, stirring two or three times during cooking. Stir in peaches. Cover with plastic wrap. Chill until set. Blend spices into whipped topping. In each of four parfait glasses layer 1/4 cup chilled pudding mix, 3 tablespoons whipped topping, 1/4 cup pudding and 1 tablespoon topping.
