Tomato Sauce Creole

Ingredients

Yield: 2 cups

1/3 cup peanut oil
2 medium onions, thinly sliced
6 Italian plum tomatoes, peeled and finely chopped
1/2 cup beef stock
1 garlic clove, chopped finely
3 drops tabasco
Salt, to taste
Freshly ground pepper, to taste


Directions

Heat oil in a saucepan, add onion and cook over low heat until transluscent but not browned. Add tomato, beef stock and seasonings; stir with a wooden spoon until tomato pulp is cooked to a fine puree. Serve with rice or grilled meats.
