Microwave-Made Easy Broccoli Soup

Ingredients

Yield: 8-10 servings

1 to 2 pounds fresh broccoli, chopped
1 medium onion, chopped
4 cups milk
8 tablespoons flour
8 tablespoons margarine
salt and pepper to taste
2 cups chicken broth
1/4 cup Parmesan cheese
1 (or more) cups grated cheddar cheese
1/4 teaspoon garlic salt
1 or more cups cubed or shredded cooked chicken (optional)


Directions

Steam broccoli in 1 1/2 quart casserole until tender (in microwave, do not overcook). Set aside. Steam chopped onion in small microwave container and set aside. Prepare a white sauce by melting 8 tablespoons margarine in 2 quart casserole. Blend in 8 tablespoons flour and salt and pepper to taste. Add 4 cups milk. Cook in microwave on power level 7 (medium high) for about 20-22 minutes, stirring every 5 minutes, until bubbly and thickened. Add cheeses and stir until melted. In large soup pot combine white sauce mixture, broccoli, onion, chicken broth and chicken. Stir to combine. Heat through and enjoy.
