Banana-Gingerbread Loaf

Ingredients

Yield: 16 servings

2 1/3 cups all-purpose baking mix
1/2 cup sugar
1/2 walnuts, chopped
2 teaspoons ginger
1 teaspoon cinnamon
1 cup bananas, mashed (about 2 large)
1/4 cup oil
1/4 cup molasses
3 eggs


Directions

Heat oven to 350 degrees. Grease and flour bottom of 9 x 5 loaf pan. Mix baking mix, sugar, nuts, ginger and cinnamon in medium bowl. Mix bananas, oil, molasses and eggs. Stir into sugar mixture until moistened; beat vigorously 40 strokes, scraping bowl once. Pour into pan. Bake 50 to 55 minutes. Cool 10 minutes. Loosen from pan and invert onto plate. Serve warm or cooled. Good spread with whipped cream cheese mixed with crushed pineapple.
