Banana Blueberry Bread

Ingredients

Yield: 12 servings

1/2 cup blueberries, drained
1/2 teaspoon soda
1 1/2 cups flour
1/2 cup oatmeal (quick or regular)
2/3 cup sugar
1/3 cup shortening, melted
2 teaspoons baking powder
1 cup mashed, ripe bananas
1/2 teaspoon salt
2 eggs

Topping:
2 tablespoons flour
2 tablespoons sugar
1 tablespoon butter


Directions

Sprinkle blueberries with 2 teaspoons of the flour. Sift together remaining flour, sugar, baking powder, soda & salt. Stir in oats. Blend together eggs, shortening & bananas, add to dry ingredients, stirring until just combined. Add blueberries, stirring just enough to distribute evenly throughout batter. Pour batter into greased & lightly floured loaf pan. Combine topping mixture and sprinkle over loaf. Bake at 350 degrees about 60 minutes. Let cool 10 minutes. Remove from pan & cool completely. Wrap cooled bread & store 1 day before slicing.
