Avocado Salad

Ingredients

Preparation time: 45 minutes
Yield: 6-8 servings

1 small package lime gelatin
1/2 cup hot water
1/2 cup pineapple juice
1/2 teaspoon salt
2 tablespoons lemon juice
1 can crushed pineapple
1/2 cup mayonnaise
1/2 cup mashed avocado
3/4 cup whipped cream


Directions

Combine gelatin, water, juice, salt, and pineapple. Chill until starts to set. Combine mayonnaise, avocado and whipped cream. Add to gelatin and mix well. Chill until firm.

Each serving contains: 235 calories, 19 g fat, 15 g carbohydrate, 329 mg sodium, 16 mg cholesterol.
