Tropical Yogurt Pancakes

Ingredients
2 cups reduced-fat baking mix
3/4 cup plain nonfat yogurt
3/4 orange-pineapple-banana juice
4 egg whites or 1/2 cup cholesterol-free egg product
1 can (151/4 oz.) tropical fruit salad, drained
Directions
Beat baking mix, yogurt, juice and egg white with wire whisk or hand beater until well blended. Finely chop enough fruit salad to equal 1/3 cup. Stir into batter. Pour by scant 1/4 cups onto hot griddle (grease griddle if necessary). Cook until edges are dry. Turn; cook until golden brown. Serve with remaining fruit salad. Makes about 14 pancakes.
Each serving contains 104 calories, 1 g fat, 18 g carbohydrate, 227 mg sodium, 0 mg cholesterol.
