Salmon Loaf

Ingredients

1 16-oz. can salmon
2/3 cup undiluted evaporated milk
2 cups soft bread crumbs
1 egg, slightly beaten
1/2 teaspoon salt
1/4 teaspoon poultry seasoning
1/3 cup finely chopped celery
1/4 cup finely chopped green pepper
1 tablespoon lemon juice
1 tablespoon instant dried minced onion
1 1 1/8-oz. package Hollandaise sauce mix, if desired


Directions

Heat oven to 375 degrees. Turn the salmon with the liquid in to a bowl; remove skin and large bones and flake salmon. Combine milk and bread crumbs; add to salmon and mix gently with a fork. Add egg, salt, poultry seasoning, celery, green pepper, lemon juice and onion. Combine gently. Turn mixture into well-greased, quart ring mold or loaf pan. Bake 30 minutes or until firm.

Serve with Hollandaise sauce made according to package directions, if desired. Makes 6 servings.

Each serving contains 200 calories, 8 g fat, 11.5 g carbohydrate, 719 mg sodium, 85 mg cholesterol.
