Zesty Broccoli Slaw
Ingredients
1 1/2 pound fresh broccoli or 1 16-oz. package broccoli slaw mix
3/4 cup cider vinegar
3/4 cup light olive oil
1 clove garlic, pressed
2 teaspoons dried dillweed
3/4 teaspoon salt
Directions
Remove broccoli leaves and cut off tough ends of lower stalks; discard. Wash broccoli. Remove florets and reserve for another use. Cut stems into thin strips and place in medium bowl. Or put prepared broccoli slaw mix in medium bowl.
Combine vinegar and remaining ingredients; pour mixture over broccoli, stirring gently to coat. Cover and chill at least 2 hours. Drain before serving, or serve with a slotted spoon. Makes 6 servings.
Each serving contains 272 calories, 27 g fat, 8 g carbohydrates, 298 mg sodium, 0 mg cholesterol.
