Juha Od Spinata (Spinach Soup)

Ingredients

1/2 pound chopped spinach
1 small onion, chopped
4 tablespoons butter
3 tablespoons flour
6 cups warm milk
salt and pepper to taste
1 egg


Directions

Saute spinach and onion in one tablespoon butter for 15 minutes. Melt 3 tablespoons butter. Add the flour and make a light roux. Add milk gradually, stirring constantly. Cook 5 minutes. Add spinach and cook another 10 minutes. Mix egg with 1/4 cup water and slowly pour into boiling soup. Cook 1 minute and serve immediately.
