Cherry Nut Bread

Ingredients

Preparation time: 1 hour
Yield: 3-4 loaves

1/2 cup shortening
1 cup sugar
2 eggs, well beaten
2 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup maraschino cherry juice
1/2 cup milk
1 8 oz. jar maraschino cherries, finely chopped
1/2 cup nuts


Directions

Cream shortening and sugar. Add eggs and beat until smooth. Sift together dry ingredients and add alternately with juice and milk. Fold in cherries and mix well. Add nuts. Bake in greased and floured pans at 325 degrees F. for 40-45 minutes or until toothpick inserted in center comes out dry.

Each serving contains: 101 calories, 4 g fat, 14 g carbohydrates, 38.5 mg sodium, 12 mg cholesterol.
