New York Waldorf Stew

Ingredients

Yield: 12-15 servings

3 lbs. stew meat
1 medium onion, chopped
1 cup celery, chopped
2 cups carrots, chopped
4 medium potatoes, chopped
3 tablespoons tapioca
1 tablespoon sugar
1 tablespoon salt
Pepper to taste
1 can tomato soup
1/2 cup water


Directions

Put meat in the bottom of a dutch oven. Layer vegetables on top. Mix together spices, tapioca, sugar, soup and water. Pour over vegetables and meat. Bake at 250 degrees for 5 hours, covered. Do not remove cover and do not stir.

Each serving contains 437 calories, 15 g fat, 48.5 g carbohydrate, 2362 mg sodium, 66.5 mg cholesterol.
