Cranberry Bread

Ingredients
Yield: Serves 12.
1 cup coarsely chopped cranberries
2 tablespoons sugar
1 tablespoon grated orange peel
2 cups flour
1 teaspoon soda
3/4 cup sugar
1 egg, beaten
1/2 cup orange juice
1/2 cup water
3/4 cup melted shortening
1 cup chopped nuts
Directions
Combine cranberries, orange rind and 2 tablespoons sugar. Set aside. Sift together flour, soda, salt and 3/4 cup sugar.
Combine egg, orange juice, water and shortening. Add to flour mixture. Combine flour mixture and cranberry mixture. Add nuts and stir only until just blended.
Bake in loaf pan at 350 degrees for one hour.
Each serving contains 297 calories, 17 g fat, 33 g carb, 208 mg sodium, 18 mg cholesterol.
