Oatmeal Applesauce Muffins

Ingredients

1 1/2 cup oatmeal
1 1/4 cup flour
1/2 cup brown sugar
1 teaspoon cinnamon
3/4 teaspoon soda
1/2 teaspoon salt
1 cup applesauce
1/4 cup oil
2 egg whites (or 1 whole egg)
1 teaspoon vanilla
1/2 cup raisins
1/2 cup chopped nuts

Topping:
1/2 cup brown sugar
1/4 cup softened margarine (1/2 stick)
1/2 cup chopped nuts
1/2 cup flaked coconut
1 teaspoon vanilla


Directions

For batter, stir together all dry ingredients. Add applesauce, oil, egg whites or egg, vanilla, raisins and nuts.

Mix lightly just until moistened. Fill greased muffin tins 3/4 full. Mix topping ingredients together and sprinkle on top of unbaked muffins. Bake at 350 degrees 15-20 minutes. Serve warm.
