Scottish-American Oatcakes
Ingredients
Preparation time: 25 minutes
Yield: 3 dozen.
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon sugar
1 1/2 cups rolled oats (uncooked)
1/2 cup butter or margarine
1 egg
2 tablespoons water
Mix together all the dry ingredients. Cut in the butter until the mixture is crumbly. Beat the egg with the water; then mix into the dry ingredients. Work this into a stiff dough.
Sprinkle a few oats on a lightly floured board and roll the dough out as thinly as possible. Cut the dough into triangles or into circles with a 2 1/4-inch cutter.
Bake on a lightly greased cookie sheet in a 400-degree oven for about 12 minutes. Serve hot with butter, cheese or jam.
Each serving contains 51 calories, 3 g fat, 5 g carbohydrate, 66 mg sodium, 6 mg cholesterol.
Directions
Note: For variety, substituting some whole wheat flour for white flour gives these oatcakes a distinctive nutty flavor.
