Spam Elegante

Ingredients

1 12-ounce can Spam Lite
3 thick square slices Monterey Jack cheese, cut in half (about 1/4 pound)
1 10 3/4-ounce can Campbell's Healthy Request Cream of Chicken Soup
1/2 cup lite sour cream
1/4 cup milk
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
1 cup finely crushed cornflakes
1 teaspoon dried parsley flakes
Frying pan with 1/4 inch of hot vegetable shortening


Directions

Heat shortening over medium-low heat. Set aside four bowls. In one bowl, put 1/4 cup of milk. In next bowl, combine the flour, salt and pepper together and stir with fork. Beat two eggs in the next bowl. Put the crushed cornflakes in the last bowl.

Slice Spam into 6 equal pieces (from top to bottom), leaving one side closed. Put 1 slice of Monterey Jack cheese into each slit. Close Spam around cheese.

Dip each piece into milk, then into flour mixture, then coat with egg and roll into the cornflakes. Fry on each side until brown. Drain on paper towel.

Put each piece of Spam into casserole dish. Mix together cream of chicken soup and sour cream. Pour over fried Spam. Sprinkle parsley over the mixture and bake for 20 minutes at 350 degrees.

Serve immediately or keep warm until serving time. Serves 6.
