Pineapple Slaw

Ingredients

1 medium fresh pineapple
1 pound shredded cabbage plus carrots (or use a ready-made slaw blend)
1 cup red bell-pepper strips
1 cup fresh snow peas, trimmed, cut in thirds crosswise
1/4 cup light mayonnaise
1/4 cup nonfat sour cream
2 teaspoons Dijon mustard
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon onion powder
Chow mein noodles to garnish, optional


Directions

Remove crown from pineapple. Cut pineapple lengthwise in half (refrigerate half for another use). Cut remaining half into quarters. Cut fruit from shells. Trim off core. Cut fruit into thin wedges.

Combine pineapple, slaw, bell pepper and snow peas in a salad bowl.

Whisk together the mayo, sour cream, mustard, honey, salt and onion powder. Pour dressing over slaw and mix well.

Top with chow mein noodles, if desired, and serve immediately. Serves 6.
