Grandma Crook's Orange Zucchini Bread

Ingredients

Preparation time: 15 minutes plus baking
Yield: 2 small loaves or 1 large loaf

3 eggs
1 cup oil
1 1/2 cups white sugar
2 cups grated zucchini
1/4 cup orange juice
2 tablespoons grated orange peel
2 teaspoons vanilla
3 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon soda
1 cup chopped nuts, optional


Directions

Beat together eggs, oil and white sugar. Add grated zucchini, orange juice, grated orange peel and vanilla.

Sift together flour, salt, baking powder and soda. Add nuts. Bake at 350 degrees in a greased loaf pan for 40 minutes, or until it tests done with a toothpick.

Glaze while hot with glaze made with juice of orange mixed with powdered sugar. Remove from pan and finish cooling.

Each serving contains 390 calories, 20 gm fat, 50 gm carbohydrates, 160 mg sodium, 53 mg cholesterol.
