Salad de Maison

Ingredients
Preparation time: 30 minutes
Yield: 6 servings
2 heads Romaine lettuce, torn into pieces
1/4 pound bacon chopped and cooked
2 cups cherry tomatoes
1 cup grated Swiss cheese
1/3 cup Parmesan cheese
2/3 cup slivered almonds
Salt and pepper to taste
1 cup croutons
Dressing:
Juice of 1-3 lemons
3 cloves crushed garlic
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup vegetable oil
Directions
Mix dressing in a jar and add oil slowly, beating continuously with a fork. Refrigerate.
Toss salad and dressing together just before serving.
Each serving contains 496 calories; 44 gm fat; 16 gm carbohydrates; 667 mg sodium; 26 mg cholesterol.
