Vermicelli Salad
Ingredients
Preparation time: 30 minutes
Yield: 8 servings
1 14-ounce package vermicelli or coiled pasta
1 medium red onion, chopped
1 medium green pepper, chopped
1 tablespoon chopped parsley
1 1/2 teaspoon celery seed
1/2 teaspoon oregano
1/2 teaspoon chopped chives
1/4 cup Italian dressing
1 cup mayonnaise
Salt and pepper to taste
1 pound shrimp or crabmeat, cooked, rinsed and marinated in 1/2 cup lemon juice.
Directions
Cook vermicelli in boiling water, according to package directions, stirring constantly. Drain and blanch with cold water. Add onion, green pepper, parsley, celery seed, chives, oregano and Italian dressing. Moisten well with the mayonnaise, add seafood, then salt and pepper to taste.
Delicious with ham or hamburgers.
Each serving contains 502 calories; 27 gm fat; 45 gm carbohydrates; 611 mg sodium; 127 mg cholesterol.
