Santa Fe Potato Salad

Ingredients
Preparation time: 1 hour
Yield: 8 servings
5 cups potatoes, cooked and cubed
1 cup Miracle Whip
1 clove garlic, minced
1/4 teaspoon oregano
1 teaspoon salt
1 1/2 tablespoons salsa
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
1/2 cup green onion, chopped
1 17-ounce can whole kernel corn
1 15-ounce can black beans
Directions
Combine Miracle Whip, garlic, oregano, salt and salsa; mix well. Add remaining ingredients and mix. Serve at room temperature or chilled.
Each serving contains 262 calories; 9 gm fat; 40 gm carbohydrates; 665 mg sodium; 10 mg cholesterol.
