Blueberry Set Salad
Ingredients
3 packages (3 oz.) black raspberry, booberry or grape gelatin
2 cups hot water
2 cans (22 oz.) blueberry pie filling
1 can (16 oz.) crushed pineapple with juice
1 carton (12 oz.) non-dairy topping, thawed
1 package (3 oz.) cream cheese, softened
1 can (6 oz.) pina colada mix
Directions
Dissolve gelatin in hot water; when gelatin is dissolved add pie filling and pineapple. Pour into a 9-by-13-inch pan; chill until set.
For topping, blend cream cheese with 1/2 container non-dairy topping and pina colada mix. Spread on top of gelatin; top with remaining non-dairy topping; chill until serving time. Makes 12-16 servings.
Each serving contains 421 calories; 12 gm fat; 78 gm carbohydrate; 174 mg sodium; 9 mg cholesterol.
