Avocado Gazpacho Soup

Ingredients

1 large cucumber, peeled, seeded and diced
1 large avocado, diced
1 large tomato, diced
1 medium green bell pepper, diced
1 medium red bell pepper, diced
1 cup celery, diced
1/4 cup green onion, sliced
2 1/4 cups beef broth
1/4 cup red wine vinegar
4 cups crushed tomatoes
1 tablespoon fresh cilantro
1 teaspoon salt
1/2 teaspoon pepper
1 dash Tabasco sauce


Directions

Combine all ingredients, cover and chill overnight. Serves 6-8.

Each serving contains 141 calories; 5 gm fat; 18 gm carbohydrate; 1093 mg sodium; 0 mg cholesterol.
