Tortellini Salad
Ingredients
1 pound cheese-filled tortellini
1/2 pound ham, julienne
1/2 pound smoked turkey, julienne
1/2 pound Monterey Jack cheese, julienne
1 cup defrosted frozen peas
2 medium carrots, julienne
1 large red pepper, julienne
Red leaf lettuce
Dressing:
1/2 cup fresh parsley, finely chopped
2 cloves garlic, minced
3/4 cup olive oil
1/3 cup red wine or balsamic vinegar
Directions
Cook tortellini al dente; rinse and cool. Toss with remaining salad ingredients except lettuce. Combine ingredients for dressing; blend with salad and chill overnight. Adjust seasonings and serve on lettuce leaf. Makes 12 servings.
Each serving contains 307 calories; 18 gm fat; 25 gm carbohydrate; 607 mg sodium; 37 mg cholesterol.
