Naborhood Fruit Bars
Ingredients
2 cups sugar
3/4 cup shortening
3 eggs
1/3 cup honey
3 tablespoons molasses
4 1/2 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
3/4 cup coconut
1 cup raisins
1 cup nuts, chopped
1 1/4 cups dates (or additional raisins)
Glaze:
1/2 cup sugar
1/4 cup water
1 tablespoon light corn syrup
1 1/3 cups powdered sugar
Directions
Cream together shortening and sugar; beat in eggs. Stir in honey and molasses. Sift dry ingredients; mix to blend, and add remaining ingredients. Roll into logs and flatten or pat into 2 lightly greased 9-by-13-inch pans. Bake at 375 degrees for 10-12 minutes or until lightly browned; do not overbake. Makes 3 dozen large or 6 dozen small bars.
For glaze, combine sugar, water and corn syrup; bring to a boil. Remove from heat, cool 5 minutes and whisk in powdered sugar. Brush on glaze while warm.
Each serving contains 114 calories; 3 gm fat; 19 gm carbohydrate; 57 mg sodium; 9 mg cholesterol.
