Barbecued Seafood Kabobs
Ingredients
Preparation time: 25 minutes plus marinating time
Yield: About 12 kabobs
1 pound fresh large shrimp, peeled and deveined
1 pound sea scallops
1 pound button mushrooms
12 bacon slices
Sauce:
1 cup regular-flavored barbecue sauce
1/2 cup honey
1/2 cup Dijon mustard
Directions
Partially fry bacon; drain and cut in half. Thread prepared shrimp, mushrooms, scallops and bacon onto skewers. Place skewers in a shallow pan; cover with half the marinade and chill 30 minutes.
Place on hot greased grill; baste with remaining sauce. Cook until shrimp change color and scallops are firm and opaque, about 6 minutes on each side.
Each serving contains 166 calories; 5 gm fat; 16 gm carbohydrate; 526 mg sodium; 43 mg cholesterol.
