Poppy Seed Spinach Salad
Ingredients
1 1/2 cups sugar
2 teaspoons dry mustard
2 teaspoons salt
1/3 cup vinegar
3 tablespoons onion, finely grated
2 cups salad oil
3 tablespoons poppy seeds
1 pound sirloin tip roast
2 bags fresh spinach
2 cans (6 oz.) mandarin oranges
1-1 1/2 cups strawberries, sliced
Directions
Combine salad dressing ingredients; blend well. Remove 1 1/4 cups dressing; reserve remaining.
Slice meat in 1/2-inch layers; marinate in 1 1/4 cups dressing for 1 to 2 hours. Grill, then slice in strips and chill.
For salad, thoroughly wash and dry spinach. Toss with oranges, strawberries and grilled sirloin. Add reserved dressing to taste immediately before serving. Makes 10-12 servings.
Each serving contains 538 calories; 44 gm fat; 33 gm carbohydrate; 461 mg sodium; 0 mg cholesterol.
