Old South Sweet Potato Casserole

Ingredients

Preparation time: 30 minutes plus baking
Yield: 12 servings

6 yams, peeled and sliced in 1/2-inch slices
6 large apples, peeled and sliced
1/2 cup butter
3 tablespoons cornstarch
3/4 cup sugar
1 teaspoon salt
2 cups water
3 tablespoons lemon juice
1 teaspoon lemon peel, grated
1 cup raisins
2 cups ham, cubed or sliced


Directions

Cover yams with water; boil for 20 minutes. Meanwhile, melt butter; stir in cornstarch, sugar and salt. Cook together and stir in 2 cups water, lemon juice and lemon peel. Cook together until thick; add raisins. Grease a 9-by-13-inch glass pan and cover bottom with sliced apples. Layer cooked yams on top of apples; cover with ham. Pour sauce over all and bake at 350 degrees for 1 hour.
