Basic Fiddlehead Ferns

Ingredients
1 pound fiddlehead ferns
Directions
Trim base of each fern, if necessary to leave only a tiny tail beyond circumference of each circular form. If furry brown covering remains on ferns, rub it off. Rinse briskly under running water.
Drop ferns into a pot of boiling, lightly salted water. Boil until tender, about 5 minutes, testing often. The full flavor will not develop if it's undercooked. Drain well and serve at once with melted butter, hollandaise, cheese sauce or mustard vinaigrette.
