Peanut Butter Balls
Ingredients
1 1/2 cups brown sugar, packed
3/4 cup flour
1/2 cup milk
1/2 cup butter
1 1/2 cups quick oats, uncooked
2/3 cup crunchy peanut butter
2/3 cup raisins
1/2 cup coconut
1 teaspoon vanilla
1/4 teaspoon salt
About 2 cups coconut
Directions
Combine sugar, flour and milk in a heavy saucepan; stir until smooth and add butter. Bring to a boil, stirring constantly. Boil hard 3 minutes, stirring constantly. Remove from heat and stir in remaining ingredients except additional coconut. Cool to lukewarm; roll in flaked coconut. Place on wax paper and cool completely. Store, covered in refrigerator. Makes about 5 dozen balls.
Each serving contains 91 calories; 4 gm fat; 33 mg sodium; 4 mg cholesterol.
