Chocolate Divinity
Ingredients
Preparation time: 40 minutes
Yield: 45-50 pieces
3 cups sugar
1/2 cup light corn syrup
1 cup hot water
2 tablespoons cocoa powder
3 egg whites, stiffly beaten
1 teaspoon vanilla
1 cup nuts, coarsely chopped
Directions
Mix sugar, corn syrup and water in heavy pan; bring to boil. Place lid on pan for about 5 minutes to dissolve sugar crystals. Remove lid and boil until syrup forms soft ball, about 232 degrees. Beat egg whites until soft peaks form. With beater on high speed, pour about half of syrup mixture over beaten egg whites. Return remaining syrup to heat until it reaches a firm ball stage, about 250 degrees. Pour slowly over mixture in bowl. Beat until mixture loses its gloss. Add cocoa powder, vanilla and nuts. Using two teaspoons, drop candy onto waxed paper.
Each serving contains 76 calories; 1 gm fat; 11 mg sodium; 0 mg cholesterol.
