Basic Tamale Pie
Ingredients
1 pound ground beef or turkey
3/4 cup chopped onion
1 1/2 cups prepared salsa
2 tablespoons tomato paste
1 teaspoon ground cumin
1 (7-oz.) package corn muffin mix
1 small can mild green chilies, chopped, drained
1 cup shredded Cheddar cheese
"Lite" sour cream, optional garnish
Yield: 6 servings
Prep time: 20 minutes
Baking: 25 minutes
Directions
Have oven heating to 350 degrees. In medium skillet, brown ground beef and onion, stirring to break up chunks. Drain well. Stir in salsa, tomato paste and cumin. Mix well. Press into a greased or oil-sprayed 9-inch baking dish.
Prepare corn muffin mix according to directions; stir in cheese and chilies. Spoon over meat mixture. Bake for 25 to 30 minutes, until lightly browned.
