Chocolate Rice Pudding

Ingredients
Preparation time: 2 hours
Yield: 3-4 servings
1 quart milk, scalded
3 tablespoons rice
1/2 teaspoon salt
1/2 cup sugar
2 squares (2 oz.) unsweetened chocolate, shaved
1 teaspoon vanilla
Directions
Scald milk in top of double boiler or in heavy saucepan. Add rice, salt, sugar and shaved chocolate. Cook until creamy and rice is tender, stirring occasionally, about 2 hours. Add vanilla and chill. Serve with whipped cream if desired.
Each serving contains 421 calories; 16 gm fat; 507 mg sodium; 24 mg cholesterol.
