Forbidden Nuts
Author: Chris Chipman
Ingredients
1/2 cup water
1 cup sugar
2 cups whole raw almonds
3 tablespoons rose water
Directions
Heat water in cast iron skillet over medium high heat. When water steams, add sugar and stir until dissolved. Stir in nuts and continue stirring until sugar syrup clings to nuts, about three minutes. When sugar coats nuts, add rose water and stir until mixture becomes white and foamy. Reduce heat to medium and continue stirring vigorously until sugar syrup returns from bottom of pan to coat nuts a second time. Pour out onto a cool, flat surface. When cooled, store in air-tight tins. Makes 2 cups nuts.
