Karl's Hot Crab Salad

Ingredients

2 heads lettuce, chopped
6 eggs, hard-cooked and chopped
2 cucumbers, chopped
4-6 green onions, chopped
2 cups raisins
1/2 cup butter
Juice of 4 lemons
12 ounces Cheddar cheese, grated
1 bottle (16 oz.) ranch dressing
2 pound flaked crab


Directions

Toss lettuce, eggs, cucumber, green onions and raisins; set aside.

Melt butter in skillet; add lemon juice and simmer.

Combine cheese and ranch dressing in saucepan; simmer until cheese is melted.

Heat crab in microwave until warmed through. Combine butter mixture, dressing and cheese. Add warmed crab to lettuce mixture. Just before serving, top with heated dressing. Makes 8-10 servings.

Each serving contains 501 calories; 34 gm fat; 314 mg sodium; 224 mg cholesterol.
