Wild Rice and Cranberry Stuffing
Ingredients
3/4 cup scallions, chopped
3 tablespoons sunflower seed oil
3 cups water
1 cup wild rice
1 teaspoon salt
1 teaspoon dill, chopped
1 cup whole fresh cranberries
Directions
Saute scallions in 2 tablespoons of oil for three minutes; set aside.
Bring water to a boil; add remaining tablespoon of oil. Carefully sprinkle wild rice over boiling water; reduce heat to a simmer. Stir thoroughly and cover. Cook, covered, over low heat for about 40 minutes.
Uncover and stir in remaining ingredients. Simmer, uncovered for an additional 10 minutes or until all the liquid is absorbed. Makes about 3 cups, or enough to stuff a 9- to 11-pound turkey or goose.
Each serving contains 167 calories; 7 gm fat; 363 mg sodium; 0 mg cholesterol.
