Ingredients
2 cups low-fat milk
1/3 cup molasses
1/4 cup yellow cornmeal
1/4 cup brown sugar
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3 eggs
1 cup low-fat milk
2 tablespoons butter or margarine
Directions
Preheat oven to 300 degrees; grease 1 1/2-quart baking dish.
Heat 2 cups milk and molasses over low heat; scald until bubbles form. Add cornmeal, a little at a time, stirring constantly. Cook 10-15 minutes, stirring occasionally until the mixture is thick. Remove from heat.
In a small bowl, beat together the sugar, spices, eggs and milk. Stir into the hot cornmeal mixture with butter; beat together until thoroughly blended. Pour into prepared baking dish; bake for 1 1/2 hours. Makes 6 servings.
Each serving contains 238 calories; 12 gm fat; 104 mg sodium; 126 mg cholesterol.
